Sam Calagione is a beer expert and founder of Delaware’s Dogfish Head Craft Brewery, one of America’s fastest growing independent breweries. Anthropology professor Patrick McGovern is the scientific director of the Biomolecular Archaeology Project for Cuisine, Fermented Beverages, and Health at the University of Pennsylvania Museum of Archeology and Anthropology.
