Soft Molasses Cookies (My Mom's, mom's, mom's, mom's recipe :)
1 cup sugar
1 cup shortening
1 cup molasses
4 cups flour
2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
1/4 tsp salt
1/2 cup boiling water
In a large bowl, sift the flour, soda, cinnamon, ginger, cloves, and salt. Set aside. In a mixing bowl, cream together the sugar, shortening, eggs, and molasses. Gradually add the sifted mix of dry ingredients to the creamed mixture. When thoroughly combined, carefully mix in the 1/2 cup boiling water. Cover dough and let stand overnight in the refrigerator. Then roll out dough and cut with a (flamingo shaped) cookie cutter.
Bake at 350 degrees for 10 minutes.
* Enjoy them with or without pink icing! ;)
